Here’s an irresistibly addictive chocolate chip cookie dough balls for all my fellow cookie enthusiasts!

An added bonus is that this recipe is super fast and easy, no fancy gadgets or gizmos required! All you need is a trusty bowl and a spoon. Simply toss in the ingredients, give ’em a good mix, and voila! Roll that dough into bite-sized balls and you’ve got in the palm of your hand a quick and yummy treat in record time.

For this recipe, I’ve ditched the dates and unleashed the power of date syrup as I wanted these cookie dough balls to be a little lighter in texture sans the fibre, perfect for satisfying those post-meal dessert cravings without feeling overly dense.

So, grab your bowl, embrace the simplicity, and let the cookie dough ball extravaganza begin!

Makes 12 cookie dough balls

Recipe

Ingredients:

  • 84g oat flour*
  • 68g almond flour
  • 56g date syrup
  • 2 tsp coconut oil
  • 1/8 tsp vanilla extract
  • 54g chocolate chips

* Oat flour made in the blender from rolled oats is safe to consume raw as they have been steam treated. If using oat flour from bag, spread a thin layer on a sheet pan and heat treat the flour at 150 degrees for 10 minutes.

Method:

  1. Add oat flour, almond flour, date syrup, coconut oil and vanilla extract into a mixing bowl and mix ingredients with a spatula until everything is well incorporated.
  2. Add chocolate chips and fold into the dough mixture.
  3. Start rolling out individual dough balls, approximately 22g each.
  4. Enjoy!
